Quick Weekend Dinner

You’ve got a paper to write, a test to study for and more homework than you ever imagined — and it is all due on Monday.

If your weekend is anything like mine, you have a lot going on and not a lot of extra time. But, you still need to eat, and while Sonic is great, you may be growing tight on cash (or simply sick of Junior Deluxe Burgers).

Hence, Taco Soup. It is a veggie-meets-Mexico concoction that I use as a great go-to meal when I cannot invest in more time-consuming meals (e.g., moussaka).

Combine one can each of whole kernel corn, ranch-style beans, pinto beans and Rotel tomatoes in a medium-sized pot. Then, add a Taco seasoning packet to the mixture, and simply heat until boiling.

While certainly not a gourmet meal, the recipe is souper – er, super easy, and does not taste too bad, either.
