Tortellini in Cream Sauce

Dear Hungry Unionites,

Out of all the quick dishes I’ve experimented with, the tortellini in cream sauce is by far one of my favorites.

Essentially, all that you need is:

– a package of cheese-stuffed tortellini

– milk/chicken broth

– cream cheese

– frozen peas (or peas and carrots)

– Parmesan cheese

You boil the pasta (about 2 handfuls) and drain it. Then, add the milk/chicken broth (just to cover the pasta) and about 1/4 of an 8 oz.  package of cream cheese, and bring that to a boil (and be sure the cream cheese is melted). Add the veggies, and sprinkle some cheese, and you’ve got a great meal that takes only a few minutes to whip up.

The sour dough bread featured in the pictures is the icing on the cake, as they say. If your mom bakes bread like my mom does, then it makes the dish even better.

What are your favorite quick, weekday meals?

Until next time,

Beth
